Cranberry-and-Orange-Infused Old Tom Gin

Pedro Ximénez Sherry
15 cc
Orange Juice
15 cc
Rosemary
1 sprig

Prepare the gin beforehand: combine 1½ cups dried cranberries, four 2-inch strips of orange peel and one bottle of Ransom Old Tom Gin. Steep for 1 hour, then strain.

Combine the infused Old Tom Gin, Pedro Ximénez Sherry, and freshly squeezed orange juice in a cocktail shaker filled with ice.

Shake vigorously until well chilled.

Strain the mixture into a chilled cocktail coupe.

Garnish with a sprig of rosemary.
