Passion Fruit Rum Punch

Use 2:1 rich simple syrup for its listed portion.

Cut the passion fruit in half and scoop out the flesh into a shaker.

Add the overproof white rum, freshly squeezed lime juice, rich sugar syrup, and passion fruit syrup to the shaker.

Shake vigorously with ice to chill and combine the ingredients.

Strain the mixture into a highball glass filled with crushed ice.

Churn the drink gently to mix the ingredients thoroughly.

Top with brut champagne or sparkling wine to add a bubbly finish.
