Use 2:1 rich simple syrup for its listed portion.

Select and pre-chill a cocktail coupe.

Prepare a garnish of a pineapple wedge and set aside.

Muddle the cloves with the Cuban rum at the base of a shaker.

Add the pastis, freshly squeezed lime juice, sherry, and rich sugar syrup to the shaker.

Shake the mixture vigorously with ice until well chilled.

Fine strain the cocktail into the pre-chilled coupe glass.

Garnish the rim of the glass with the prepared pineapple wedge.
