Reserve a portion of the India Pale Ale and set aside.

Combine the apple brandy, Cynar, lemon juice, honey syrup, and the remaining India Pale Ale in a shaker.

Dry shake the mixture briefly to flatten the beer.

Add ice to the shaker and shake again until well-chilled.

Strain the mixture into an Old Fashioned glass.

Top with the reserved India Pale Ale and add enough ice cubes to fill the glass.

Garnish with a twist of grapefruit peel.
