Use 2:1 rich simple syrup for its listed portion.

Use these specified component styles: Light white rum (charcoal-filtered 1-4 years old).

Chill a cocktail coupe to ensure your drink stays refreshingly cold.

Prepare a garnish by twisting a strip of lime zest and cutting a small wedge of pineapple.

Combine both types of rum, pineapple juice, freshly squeezed lime juice, rich sugar syrup, egg white or Fee Foam, Difford's Daiquiri Bitters, and a touch of saline solution in a cocktail shaker.

Add ice and shake vigorously to chill the mixture, then strain the liquid back into the shaker.

Dry shake the mixture (without ice) to create a silky texture and emulsify the ingredients.

Fine strain the cocktail into the pre-chilled coupe glass.

Express the lime zest twist over the drink to release its oils, then discard the twist.

Finish by placing the pineapple wedge on the rim of the glass for a tropical touch.
