Chill a cocktail coupe glass in advance to ensure the perfect temperature for serving.

Prepare a garnish by twisting a piece of lemon zest, setting it aside for later use.

Add Hayman's Old Tom Gin, chilled Strucchi Rosso Vermouth, and a couple of dashes of Angostura Orange Bitters into a mixing glass.

Stir the ingredients gently with ice until well chilled.

Strain the mixture into the pre-chilled cocktail coupe.

Express the lemon zest twist over the cocktail to release its oils and then place it as a garnish on top.
