Prepare the washed gin: combine 50 g fresh mozzarella, 1 oz olive oil and 4 oz gin. Sous vide at 140 F for a couple of hours, freeze overnight and fine strain. Use the listed 65 cc prepared gin.

Reserve 1 of the listed 11 arugula leaves for garnish and muddle the other 10 in a shaker. Add the prepared gin, honey syrup and lemon juice, then shake with ice. Double strain into a rocks glass over one large ice cube and garnish with the reserved leaf.
