Chill a cocktail coupe in the freezer until frosty.
In a cocktail shaker, combine the Irish whiskey, dark Crème de Cacao, dry vermouth, sage syrup, and sherry vinegar.
Add a couple of dashes of Angostura bitters to the shaker.
Fill the shaker with ice and shake vigorously until well chilled.
Strain the mixture into the prepared frozen coupe glass.
