Summer in Albuquerque

For watermelon syrup, combine 1/2 cup watermelon juice, 1/2 cup white sugar, 1/8 teaspoon salt and a 1 inch piece of vanilla bean. For the prepared foam, combine 2 egg whites, 0.5 oz of that syrup, 2 oz watermelon juice and 1 oz lemon juice in a suitable siphon, charge according to the equipment instructions, shake vigorously and chill for 2 hours. Dispense the listed 2 tbsp prepared foam into a coupe. Lightly muddle the listed charred pineapple and jalapeno, add the remaining measured cocktail liquids and ice, shake and double strain over the foam.
