Angel's Draft

Use these specified component styles: Light white rum (charcoal-filtered 1-4 years old).

Chill a cocktail coupe in advance.

Prepare a garnish by twisting a piece of grapefruit zest and setting aside a mint leaf.

Combine the light white rum, Yellow Chartreuse, freshly squeezed lime juice, agave syrup, Bob's Grapefruit Bitters, mint leaves, and your choice of egg white or alternative foamer in a shaker. Add ice and shake well.

Strain the mixture back into the shaker, discarding the ice.

Shake again without ice for a dry shake.

Fine strain the cocktail into the pre-chilled coupe glass.

Express a twist of grapefruit zest over the cocktail and then discard it.

Garnish the drink by either floating the mint leaf on top or affixing it to the rim with a touch of honey.
