Fill an Old Fashioned glass with ice and add a small amount of absinthe. Swirl the absinthe around to coat the inside of the glass, then discard the excess.

In a shaker, combine the Oloroso sherry, Scotch, lemon juice, and Grade B maple syrup. Add ice and shake thoroughly.

Strain the mixture into the prepared Old Fashioned glass.

Express the oils of an orange peel over the drink, wipe the rim with the peel, and drop it into the glass as a garnish.
