Chill a cocktail coupe in advance to ensure optimal serving temperature.
Prepare the garnish by selecting three espresso beans to float on top of the finished cocktail.
Add cognac, Lustau Amontillado Los Arcos Sherry, Lustau San Emilio Pedro Ximénez Sherry, Exprè Caffè Italiano or freshly made hot espresso coffee, honey, and a dash of Fee Brothers Black Walnut bitters to a cocktail shaker.
Fill the shaker with ice and shake vigorously to combine and chill the ingredients.
Fine strain the mixture into the pre-chilled coupe glass.
Garnish the cocktail by floating the prepared espresso beans on top.
