Dry shake the cognac, lime juice, orgeat, falernum, Peychaud's Bitters, and egg white without ice to combine thoroughly.

Add ice to the shaker and shake vigorously to chill the mixture.

Top with soda water, and use additional soda to rinse the shaker, straining the rinse into the glass to create more foam.
