Use these specified component styles: Quince liqueur.

Chill a cocktail coupe in advance and prepare a twist of lime zest for garnishing.

Combine the Old Tom Gin, quince liqueur, freshly squeezed lime juice, egg white (or Fee Foam), and a few drops of saline solution in a shaker.

Add ice to the shaker and shake vigorously, then strain the mixture back into the shaker.

Dry shake the liquid without ice to emulsify the ingredients thoroughly.

Fine strain the cocktail into the pre-chilled coupe glass.

Express the lime zest over the cocktail to release its oils and place it as a garnish on the rim.
