Muddle the raspberries with the homemade lychee gum syrup at the bottom of a shaker.

Add the gin, freshly squeezed lime juice, and egg white to the shaker, holding back the lemon peel for later.

Dry shake the mixture vigorously to emulsify the ingredients.

Add ice to the shaker and shake again to chill the cocktail.

Double strain the mixture into a chilled cocktail coupe to ensure a smooth, refined texture.

Express the lemon peel over the drink, releasing its aromatic oils.

Garnish with the expressed lemon peel, enhancing the cocktail's presentation and aroma.
