THE RECIPE
How to make Bird of Paradise Gin Fizz with Old Tom Gin, Lime Juice, Raspberry Syrup. See ingredients and step-by-step instructions.
Combine Hayman's Old Tom Gin, freshly squeezed lime juice, raspberry sugar syrup, orange blossom water, and egg white in a shaker filled with ice. Shake thoroughly.
Strain the mixture back into the shaker, discarding the ice. Shake again without ice to emulsify the ingredients.
Slowly pour two-thirds of the mixture from a height into a chilled highball glass, while simultaneously pouring the soda water with your other hand. Ensure both streams of liquid merge seamlessly as they fall into the glass.
Allow the cocktail to settle for at least a minute, ideally placing the glass in a fridge or freezer during this time to maintain chill.
Finish by pouring the remaining contents of the shaker into the glass, creating a frothy head that rises like a soufflé.
