For the first listed rum option, use Hamilton Jamaican gold rum infused with golden raisins, vanilla, cloves, cinnamon, cardamom and allspice. Plain El Dorado five-year-old rum may be used as an alternative.

Start with these components prepared in advance: Rum (Infused Hamilton Jamaican gold rum or El Dorado five-year-old rum; see notes).

Shake the rum, cognac, orgeat, lemon juice, lime juice, and grapefruit juice with ice until well chilled.

Strain the mixture into a highball glass filled with crushed ice.

Garnish with a few dashes of Angostura bitters.

Place a spent lime shell on top of the drink and fill it with a sugar cube and a splash of Green Chartreuse.

Carefully light the Chartreuse to caramelize the sugar cube, creating a dramatic presentation.
