Cumin-Cilantro Spritzer

Start with these components prepared in advance: Simple syrup (Lemon & Thyme infused).

Muddle the cilantro gently in the lime juice at the bottom of a mixing tin.

Add ice, then pour in the lemon and thyme-infused simple syrup, light rum, and kummel.

Shake the mixture vigorously to combine the flavors.

Fine strain the mixture into a highball glass filled with fresh ice.

Top with ginger ale and gently stir to integrate.

Garnish with an additional lime wedge and a sprig of cilantro for a refreshing finish.
