Green Leaves of Summer

Combine the Genepy, gin, apple liqueur, lemon juice, lime juice, and egg white in your cocktail shaker.

Whip shake these ingredients with a couple of ice cubes until the ice is nearly dissolved.

Open the shaker, add the cream and a handful of cracked ice, then shake vigorously for a short burst.

Open the shaker again, add sparkling water, and strain the mixture into a highball glass, leaving out any ice.
