Instructions

Use the specified component styles before mixing. Required component: Simple syrup (peach, see note).

Combine the Cognac, rye, freshly squeezed lemon juice, egg white or aqua faba, peach simple syrup, and peach bitters in a cocktail shaker.

Dry shake the mixture vigorously to emulsify the ingredients.

Add ice to the shaker and shake again to chill and dilute.

Pour the seltzer water into the shaker.

Strain the cocktail into an Old Fashioned glass filled with ice.
