Mojito de Casa

Use 2:1 rich simple syrup for its listed portion.

Muddle the mint leaves gently at the base of a highball glass, just enough to release their aroma.

Add the reposado tequila, freshly squeezed lime juice, and rich sugar syrup to the glass.

Half fill the glass with crushed ice and churn with a bar spoon to mix well.

Top up the glass with more crushed ice and churn again to ensure everything is well combined.

Finish by topping the drink with Thomas Henry Soda Water, give it a final stir, and serve immediately.
