Splash some absinthe into a frozen cocktail coupe and swirl it around to thoroughly coat the inside and rim.

Rim the glass with pomegranate sugar, then return it to the freezer to keep chilled.

In a cocktail shaker, combine the gin, limoncello, Ancho Reyes chile liqueur, and freshly squeezed lime juice with ice. Shake well until the mixture is thoroughly chilled.

Strain the mixture into the prepared, frozen cocktail coupe.
