Brass Rail

Use 2:1 rich simple syrup for its listed portion.

Select and pre-chill a cocktail coupe.

Prepare a garnish of a flamed orange zest twist and ground cinnamon.

Shake the rum, Bénédictine, freshly squeezed lemon juice, rich sugar syrup, egg white or alternative, and a dash of orange bitters with ice. Strain back into the shaker.

Dry shake without ice.

Fine strain the mixture into the chilled coupe.

Express the flamed orange zest twist over the cocktail and then discard the twist.

Dust the surface with cinnamon powder.
