Prepare jalapeno tequila: cut 2 fresh jalapenos lengthwise. Remove their seeds and membranes and put ONLY these into 1.5 cups silver tequila; discard the remaining pepper flesh. Infuse 10 to 20 minutes to the desired heat, then strain. Measure the listed 0.5 oz prepared tequila.
Stir the Amontillado sherry, prepared tequila, mezcal, agave syrup and listed 2 dashes celery bitters with ice. Strain into a chilled coupe.
